Paysanne has been a Deganwy fixture since 1988. After 15 years of running it, Bob & Barbara turned the keys over to their son, Cai who took the reins in 2003. Last year, Cai joined forces with the chef David Hughes to run Paysanne as a joint venture with renewed vigour. They made a few sympathetic changes to the place (including opening for Sunday Lunches for the first time) and were rewarded with Paysanne’s most successful year ever.
